How to make Clay Pot Rice

Ingredients for Clay Pot Rice

  • Rice - 1 cup

  • Chicken sausages - 3

  • Oil - 2 tablespoons

  • Garlic chopped - 2 tablespoons

  • Ginger cut into thin strips - 1½ inch

  • Salt 

  • White pepper powder - 1 teaspoon

  • Chicken stock - 2½ cups

  • Chicken breast cut into cubes - 1

  • Soy sauce - 2 teaspoons

  • Oyster sauce - 2 tablespoons

  • Sugar - 1 teaspoon

  • Vinegar - 2 teaspoons

  • Spring onion bulbs sliced - 2

  • Spring onion greens cut into thin strips - 

  • Mushrooms soaked - 4

Method

Step 1

Heat a tablespoon of oil in a non-stick pan and add one tablespoon garlic and 1/3 ginger and fry till it turns golden brown.

Step 2

Add rice and mix completely. Add salt, 1/2 the white pepper powder and chicken stock and mix well. Cover and cook on medium heat till rice is almost cooked.

Step 3

Put chicken, oyster sauce, soy sauce, sugar, vinegar, salt and remaining white pepper powder into a bowl and mix well.

Step 4

Heat remaining oil in non-stick pan, add remaining garlic, one third ginger and spring onions and cook for fifteen seconds.

Step 5

Add chicken and cook it tossing on high heat.

Step 6

Cut the sausages diagonally and add it to the pan and toss.

Step 7

Add the chicken mixture to the rice in the pan and spread it evenly. Put some spring onions and remaining ginger on top of it.

Step 8

Chop mushrooms, and add it to the pan, cover and cook for eight more minutes.

Step 9

Now transfer the rice into a clay pot and serve garnished with spring onion green.
