How to make Mashed Potato Rings
Potatoes peeled - 4 medium
Bread crumbs fresh - 1 cup
Bread crumbs dried - 1 cup
Cornflour/ corn starch - 3 tablespoons
Chives chopped - 3
Salt
Oil
Butter
Method
Step 1
Cut potatoes into medium sized cubes and put them into a deep pan.
Step 2
Add enough water to cover the potatoes. The add salt to it and mix.
Step 3
Cover and cook till all the water is dissolved and the potatoes are cooked.
Step 4
Smash the potatoes with a masher and cook on low heat till all the water disappears and the mixture becomes thicker.
Step 5
Add fresh cream and butter to it and mix well.
Step 6
Now put the mixture into a plate and allow it to cool.
Step 7
Now transfer into a large bowl, add chives, cornflour and fresh bread crumbs and mix together.
Step 8
Form rings of the mixture and deep fry till golden brown and crispy.
Step 9
Drain on tissue paper.

How to make Mutton Chops
Mutton chops - 500 grams
Red chilli sauce - 1 teaspoon
Dark soy sauce - 1 teaspoon
Light soy sauce - 1 teaspoon
Garlic minced - 1 tablespoon
Salt
Black pepper powder
Vinegar - 1 teaspoon
Castor sugar (caster sugar) - 1 teaspoon
Sesame oil (til oil) - 1 tablespoon
Oil
Cornflour/ corn starch
Onion-garlic
Method
Step 1
Take the mutton chops pieces into a bowl. Add chilli sauce, light soy sauce, garlic, dark soy sauce, salt, pepper powder, vinegar, castor sugar and sesame oil to it and mix well. Keep aside to marinate for 20 minutes.
Step 2
Heat a non-stick pan. Add some mutton chops along with the marinate and also 1 cup water. Stir well and boil for sometime. Cover and cook for another 30 minutes. Remove from heat and keep to cool to room temperature.
Step 3
The heat sufficient oil in a kadai. Spread some cornflour on a plate.
Step 4
Dab the mutton chops in the cornflour and deep-fry in hot oil till it turns golden brown and crisp. Drain on tissue paper.

Boneless chicken cut into cubes - 450 grams
Coconut milk - 1/2 cup

Turmeric powder - 1/4 teaspoon
Lemon juice - 1 tablespoon

Ginger-garlic paste finely chopped 1 - 1/2 tablespoons
Onion - 1 medium
Garam masala powder - 1 teaspoon
Red chilli powder - 1/2 teaspoon
Cumin powder - 1 teaspoon
Chicken stock - 3 cups
Method
Step 1
Take some chicken pieces into a bowl. Add salt, turmeric powder and lemon juice to it and mix well. Keep aside for 10 minutes.
Step 2
Heat sufficient oil in a non-stick pan. Add ginger-garlic paste, stir and boil well. Add onion, mix and fry on high heat till translucent.
Step 3
Add chicken, mix well and cook for another 1 minute. Add garam masala powder, chilli powder and cumin powder, mix well and cook till the oil separates.
Step 4
Add chicken stock, stir to mix, cover and bring to boil. Lower the heat and simmer for another 10 minutes.
Step 5
Add coconut milk, mix well and boil for 4 minutes.

Boneless chicken cut into thin strips - 200 grams
Penne pasta, boiled - 200 grams
Dried red chillies seeded and soaked - 2
Lemon grass chopped - 2
Shallots chopped - 6
Garlic cloves chopped - 8
Galangal chopped - 1 inch
Coriander seeds - 2 teaspoons
Cumin seeds - 1 teaspoon
White peppercorns - 6
Salt
Oil - 2 tablespoons
Butter - 1 tablespoon
Chicken stock - 1 cup
Coconut milk - ¾ cup
Red chilli powder - ½ teaspoon
Fresh basil leaves - 20
Lemon juice - ½ tablespoon
Lemon zest grated - 1 teaspoon
Method
Step 1
To prepare red curry paste, mix together red chillies, shallots, lemon grass, 5 garlic cloves, galangal, coriander seeds, cumin seeds, white peppercorns and salt until it becomes a smooth paste.
Step 2
The heat sufficient oil and butter in a non-stick pan, add the remaining garlic, prepared red curry paste and fry for a minute. Now add chicken strips and 1 cup chicken stock and cook it.
Step 3
Add penne pasta to it and mix well. Add coconut milk, remaining chicken stock, red chilli powder and mix it well and cook for another 3minutes.
Step 4
Add torn basil leaves, lemon juice and lemon zest to the mixture and mix it well.

How to make Hot Thai Chicken Wings?
Thai red curry paste - 1 1/2 tablespoons
Chicken wings - 8
Oil
Ginger garlic paste - 1 tablespoon
Salt
Crushed black peppercorns
Refined flour (maida) - 1/2 cup
Egg - 1
Garlic chopped - 1 tablespoon
Spring onion greens - 1
Red chilli sauce - 1 tablespoon
Fish sauce - 1 tablespoon
Tomato ketchup - 1 tablespoon
Snow peas - 10
Basil leaves - 8
Method
Step 1
First you need to heat some oil in a pan.
Step 2
Make two halfs of the chicken wings and put it into a bowl. Then add ginger garlic paste, salt and crushed peppercorns, mix well and keep aside to marinate for 15 minutes.
Step 3
Mix refined flour, egg, salt and crushed peppercorns with water in a bowl and mix well. Add the prepared batter to the chicken pieces and mix well.
Step 4
Deep-fry the chicken pieces in hot oil till it turns golden brown and crispy. Drain on tissue paper.
Step 5
In order to prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add garlic, mix and boil for 30 seconds.
Step 6
Slice spring onion bulb and add it to the pan and mix well.
Step 7
Add Thai red curry to it and mix well. Add some water, mix and cook for a minute. Add red chilli sauce, fish sauce and tomato ketchup and mix together. Then add some water, mix and cook on low heat for a minute.
Step 8
Add fried chicken to the sauce and mix well.
Step 9
Serve it hot. Garnish with chopped spring onion greens.

How to make Chocolate Chip Waffle
Chocolate chips - 1/2 cup
Refined flour (maida) - 1 1/2 cups
Powdered sugar - 3/4 cup
Eggs - 2
Baking powder - 1 teaspoon
Vanilla essence - 1 teaspoon
Butter - 2 tablespoons

Method
Step 1
Put flour and powdered sugar into a bowl. Add baking powder to it and mix well.
Step 2
Make a well into the centre and add eggs to it. Add vanilla essence and mix well. Add milk, slowly and keep stiring until a smooth batter is formed.
Step 3
Add butter to the batter and mix well. Add chocolate chips and mix well.
Step 4
The you need to heat a waffle iron. Grease it with some butter, pour the batter into it, cover and cook for 3 minutes or till goldenish.
